Ingredients: Slow Cooker Roasted Pork Loin
- pork loin OR Boston shoulder/butt, or scotch fillet, skinless (Note 1)
- tablespoons olive oil, separated
Rub the spices:
- teaspoons paprika, thyme
- teaspoon each garlic powder, onion powder
- teaspoon cayenne pepper, optional
- tablespoon of pepper
- tablespoons of salt
Honey Butter Sauce:
- unsalted butter
- garlic cloves, minced
- cup of cider vinegar
- teaspoon salt and pepper each

Thickener:
- teaspoons of cornflour/cornstarch mixed with a little water
How to Make: Slow Cooker Roasted Pork Loin
- Spice Rub: Rub pork with about 1 teaspoon oil. Mix and sprinkle over pork. Pat to tie everything together.
- Brown: Then heat 1 tablespoon oil in a large skillet over medium heat. Add the pork and sear until browned (do not let the seasonings burn). But put the pork in the slow cooker.
- Honey Butter Sauce: Clean the pan. Add the butter and melt. Add garlic and cook for 1 minute until golden. Add the remaining sauce ingredients, mix and cook quickly for 30 seconds.
Slow Cooking:
- However, pour the sauce over the pork. Cover the slow cooker.
- Pork loin: i.e. cook on low heat for 4 to 5 hours (see Note 2 for cooking times for different sizes)
- Pork Shoulder: However, cook on low for 10 hours (see Note 2 for cooking times for different sizes and Note 4 for oven, instant pot, and pressure cooker methods).
- So, remove the pork to the serving plate, cover loosely with aluminum foil (let rest 10 to 20 minutes). (See Note 6 on cooking)
- Of course, pour all the juices from the slow cooker into a large saucepan. Add cornflour and water mixture, mix.
- Thick sauce: Then cook over medium heat for 5 minutes or until reduced to a syrupy consistency (Note 3).
- Finally, cut the pork into thick slices (1.5 – 2 cm / 3/5 – 4/5” thick). Serve with LOTS of butter and honey sauce!
