For the caramel:
- 80 ml of water
- 3/4 cup of Sugar
For the pudding:
- 1 cup of sugar
- Juice of 1/2 lemon
- 8 egg whites
- 1 tbsp. lemon zest
Preparation
To make the caramel:
- In a cooking container, place the sugar and heat it over low heat until it melts and creates a golden syrup.
- Gradually add the water and allow it to dissolve completely to achieve a glossy caramel.
- Proceed to caramelize both the bottom and the edges of a 22 cm diameter circular mold with a hole in the center, and reserve said mold.
To make the pudding:
- Place the egg whites in the mixer and mix until firm peaks form.
- Gradually add the lemon juice and sugar, beating for about 4 minutes after each addition.
- Then, add the lemon zest and mix gently with a spoon to integrate it. Pour spoonfuls of the mixture into the caramelized mold, making sure to distribute it evenly to avoid empty spaces.
- Bake in a water bath at 150°C for approximately 50 minutes, or until the top is golden brown.
- When finished, remove it from the oven, allow it to cool and proceed to unmold it.
