- In a heat-resistant bowl, place the chopped chocolate and butter. Melt the mixture in a double boiler, stirring gently until you obtain a smooth and homogeneous texture.
- Remove from the heat and let the chocolate and butter mixture cool for a few minutes.
- In another container, beat the egg yolks with the sugar until you obtain a creamy and smooth mixture.
- Slowly pour in the whole milk while continuing to whisk the mixture.
- Transfer the yolk and milk mixture to a saucepan and heat over medium-low heat. Cook the mixture, stirring constantly, until it thickens slightly and reaches a temperature of around 75°C. Do not allow it to boil.
- Remove the saucepan from the heat and add the previously melted chocolate and butter mixture. Mix well until all ingredients are completely incorporated.
- Place a large bowl over ice and pour the chocolate ice cream mixture into it. This will help cool the mixture quickly and prevent ice crystals from forming.
- Add the cold cream and mix gently until you obtain a uniform consistency.
- Cover the container with plastic wrap, making sure it is in direct contact with the surface of the mixture to prevent a crust from forming.
- Refrigerate the mixture for at least 4 hours or preferably overnight to allow the flavors to develop and the mixture to cool completely.:
- Once the mixture is very cold, place it in the refrigerator according to the manufacturer’s instructions. If you don’t have an ice cream maker, you can pour the mixture into a freezer-safe container and blend it by hand every 30 minutes for the first 2 hours to break up the ice crystals and obtain a smoother texture.
- Once the ice cream has reached the desired consistency, transfer it to a freezer-safe container and cover with plastic wrap or a tight-fitting lid. Freeze for at least 4 hours or until firm.
