Ingredients
- 2 cups plus 2 teaspoons all-purpose flour with baking powder
- 1/2 tsp. of salt
- 2 cups of sugar
- 2 sticks of unsalted butter
- 1 cup of water
- 1 tsp. of soda
- ½ cup buttermilk
- 2 eggs
- 1 tsp. vanilla
For the cream:
- 3 cups granulated sugar
- 1 bar of butter
- 1 cup heavy cream
- a pinch of salt
- 2 teaspoons vanilla
Procedure
- Preheat the oven to 180°C.
- Grease two different molds with butter and flour respectively. Sift 2 cups plus 2 tablespoons flour and salt into a bowl.
- Beat sugar until combined. In a saucepan, melt the butter with the water and add the flour and sugar mixture, stirring vigorously.
- Pour in the club soda, buttermilk, eggs and vanilla extract; Mix until the ingredients are homogeneous and smooth.
- Pour the batter into the pan containing the butter and flour mixture before baking for 20-25 minutes; Check after 15 minutes if it is done (the cake is ready when a toothpick comes out clean).
- Let cool on a rack for 15 minutes before transferring the layers to parchment paper to cool completely.
Caramel glaze :
- In a large saucepan, combine 2 ½ cups of sugar, the butter, cream and a pinch of salt. Heat it over medium heat until it is almost boiling.
- At the same time, in a smaller saucepan, melt ½ cup of sugar over medium heat until it turns amber.
- Don’t stir the sugar, but shake the saucepan every few minutes to disperse it evenly.
- Pour the syrup into the largest saucepan and cook over medium-high heat, stirring constantly, until it reaches 232 degrees on a thermometer or is almost completely smooth.
- Remove from the heat and stir in the vanilla before letting it cool for 15 minutes. If the mixture dries too quickly, use an electric or hand mixer on medium speed to beat until thickened for 15-20 minutes.
