Ingredients
- 2 cups potatoes peeled and cut into cubes
- 1 and 3/4 cups sliced carrots
- 225 grams of butter , cubed
- 2/3 cup chopped onion
- 1 cup plain flour
- 1-3/4 teaspoons salt
- 1 teaspoon dried thyme
- 3/4 teaspoon pepper
- 3 cups chicken broth
- 1-1/2 cups whole milk
- 4 cups cooked chicken, cubed
- 1 cup frozen peas
- 1 cup frozen corn
- 4 sheets of chilled pie dough
Preparation
- Start by boiling the potatoes and carrots in a saucepan until they are tender. Drain and reserve.
- In a large skillet, melt the butter. Add the chopped onion and sauté until transparent.
- Add the flour, salt, thyme and pepper, cooking and stirring constantly until the mixture is lightly browned.
- Slowly pour in the chicken broth and milk, stirring constantly. Cook until the mixture thickens.
- Add the chicken, previously boiled potatoes and carrots, peas and corn. Stir well and cook until everything is hot.
- Unroll the sheets of pie dough and place two in a pie plate. Pour the preparation and cover with the other two sheets of dough. Make sure to seal the edges.
- Bake at 220°C for about 35-40 minutes or until the dough is golden.
- Remove from the oven and let rest for a few minutes before serving.
