Croquettes are one of those snacks that both adults and children love. Perfect for a snack, a light dinner or simply when you’re craving something delicious.
On this occasion, I bring you a recipe to make chicken croquettes that will be the hit of any gathering. If you are a chicken fan, this recipe is for you.
Ingredients
- 1/2 chicken breast or leftover baked chicken
- 2 eggs
- 1/2 onion
- 1/2 small carrot
- 2 generous tablespoons of flour
- 200 ml whole milk
- 100 ml meat broth
- 2 large tablespoons of butter
- bread crumbs
- salt
- pepper
- nutmeg
- garlic
- thyme
Preparation
- We start by boiling an egg in water with a touch of salt. Add the cubed breast and sliced carrot. Once ready, refresh with cold water, peel the egg and chop it very finely.
- We shred the chicken well and cut the carrot into small cubes. In a frying pan, heat a little oil over medium heat and sauté the mixture along with a touch of thyme and garlic. Then, we reserved.
- In a large frying pan, melt the butter with a splash of oil. Brown the finely chopped onion and, once tender, add the flour, stirring well to integrate it.
- Little by little, we add the meat broth while stirring. Then we add the milk and continue mixing. We keep it on low heat for a few minutes until it gains consistency.
- Add the chicken, egg and carrot mixture to the pan. Stir well, season with salt and pepper to taste and let cook for another minute.
- We give it a touch of nutmeg. The dough must be very firm so that the croquettes maintain their shape when frying.
- We transfer the dough to a large container and cover. We let it cool in the refrigerator for at least a few hours. If you have time, morning to night is ideal.
- We take out the dough and, with two spoons, we form the croquettes. We dip them in beaten egg and then in breadcrumbs.
- Fry the croquettes, a few at a time, in very hot oil. They should be golden brown.
- Once ready, we put them on kitchen paper to remove excess oil. Serve hot and accompany with a delicious salad dressed with lemon.
Tip: For a different version, you can add grated cheese or pieces of ham to the dough before forming the croquettes. They look amazing!
