How to make stuffed eggplants au gratin, a super tasty recipe!

Lately, eggplants are used in various types of foods due to their flexibility, texture and beneficial properties for our health. On this occasion, we are going to teach you how to prepare delicious stuffed eggplants au gratin .

This vegetable can be stuffed with anything, as it adapts to any ingredient. We also leave you a very easy filling to prepare so that you can try it and then you can modify it to your liking.

For these delicious eggplants, you will need:

Ingredients

  • 1 large eggplant
  • 200 gr of Chicken Breast
  • 1 Leek
  • 1/2 Carrot
  • 2 cloves of Garlic
  • 1 tsp. of salt
  • Black pepper to taste
  • 50 g of grated Mozzarella Cheese
  • 50 gr. chopped parsley to decorate

For the Bechamel sauce

  • 1 tsp Olive Oil
  • 200 ml. milk
  • 1 tbsp cornstarch
  • A pinch of nutmeg
  • A pinch of salt
  • Pepper to taste

Preparation

1- To begin, we preheat the oven to 200°C. Once hot, cook the halved eggplant until the meat is tender. We remove from the oven and set aside for a moment.

2- On the other hand, in a frying pan we put 1 tsp. of oil and wait for it to warm up a little. When it is very hot, we add the carrot previously chopped into small squares.

3- When the carrot is tender, add the previously chopped leek.

4- We make some space in the pan and brown the diced chicken. Once it is browned, we combine the ingredients.

5- Carefully remove the pulp from the eggplant, chop a little and add it to the pan.

6- Add the chopped garlic, season with salt and pepper and let it cook for a few minutes.

7- Meanwhile, we can make the bechamel. In another pan we put the olive oil together with the cornstarch and mix over medium heat. After 1 minute, add the milk and stir constantly until it thickens.

8- Once thick, add the nutmeg, salt, and pepper, mix a little and turn off the heat. We reserve until it is used.

9- To finish the preparation, we put the eggplants in a bowl and fill them to the top. Pour the bechamel sauce and sprinkle the grated cheese.

10- Bake until the cheese and sauce are golden brown.

And that’s it, we decorate with parsley and enjoy this delight!
