How to make quick and easy lemon sponge cake

The lemon sponge cake not only invites us to enjoy a soft and citrus flavor, but also to remember those afternoon snacks at home.

It is that aroma that comes out of the oven and envelops us, that refreshing touch of lemon and that special texture that takes us straight to childhood.

Here I tell you how to do it easily:

Ingredients

  • 3 eggs
  • 200g sugar
  • 200 g of 0000 flour
  • 100 g melted butter
  • 120 ml milk
  • Juice and zest of 2 lemons
  • 1 splash of vanilla essence (optional)
  • 1 teaspoon baking powder
  • a pinch of salt

Preparation

  1. Start by preheating the oven to 180°C. Meanwhile, prepare a mold (about 20-23 cm in diameter) by greasing it with a little butter and sprinkling it with flour.
  2. In a bowl, beat the eggs together with the sugar. The idea is to achieve a mixture that takes on a lighter tone and a foamy texture.
  3. Without stopping beating, I added the previously melted butter, making sure it is well integrated into the mixture.
  4. To this preparation, add the lemon juice and zest. If you opted for vanilla essence, this is the time to add it.
  5. On the other hand, in a container, sift the flour together with the baking powder and salt. Sifting is a small step that makes the difference, ensuring that our cake is well aerated.
  6. Now, little by little, add the dry ingredients to the main bowl, making gentle and enveloping movements. Don’t forget the golden rule: don’t overmix.
  7. Add the milk to the dough. Stir carefully until you achieve a uniform consistency.
  8. Pour the preparation into the mold you had reserved and even out the surface with the help of a spatula.
  9. Bake in the oven for about 30-40 minutes. A good way to check if it’s ready is with the toothpick trick: if you insert it into the center and it comes out dry, it’s perfect!
  10. Once cooked, let the cake cool inside the mold for a few minutes. Then, with a lot of love, unmold it and let it cool on a rack.
  11. If you want to give it a final touch, once cold, sprinkle a little powdered sugar on top.
