How to make homemade dough for berlinesas (friar balls) They will be soft, sweet and spongy!

Preparing the Berliner Dough at home is an easy and perfect task to accompany a delicious breakfast or snack.

It has a spongy and soft texture that is usually filled with dulce de leche, custard or other desserts, something that we often find tempting in cafes or bars.

This “dessert” is a great complement to any birthday banquet or celebration, and its sweetness will please those with a sweet tooth.

The secret of its success lies in the dough, similar to that of donuts, which retains its softness even if it is stored in the refrigerator.

This recipe describes the ingredients needed, provides detailed instructions, and offers some helpful tips to ensure success in making it:

Ingredients

  • 600 gr. of Flour 000
  • 60 gr. of sugar
  • 50 ml. of whole milk
  • 1 tbsp. of vanilla extract
  • sugar to taste
  • 5 Eggs
  • 10 gr. of fresh yeast
  • c/n Oil (for frying)
  • 50 gr. of Manteca

Preparation

  1. We sift the flour and put it in the mixer bowl.
  2. In a separate bowl, mix the yeast with the milk before adding it to the flour.
  3. We also add vanilla extract, sugar and three beaten eggs to the mixture.
  4. We mix all the ingredients until the dough is formed.
  5. Then, we add two more eggs and the melted butter to the dough.
  6. Kneading the dough for 10 minutes, we let it rest in a bowl covered with a damp cloth for three hours, until it doubles in size.
  7. Then, on the table, we spread the dough until it is approximately 1 cm thick.
  8. We cut each Berliner and place them in a bowl, then we cover them with plastic wrap and let them rest for another 30 minutes.
  9. Heat the oil in a wide frying pan until hot, then reduce the heat to medium and start frying the berliners.
  10. As they cook, they will begin to puff up. When one side is golden brown, turn them over to finish cooking.
  11. When they are golden brown, remove them from the pan and place them on kitchen paper to absorb the excess oil. Sprinkle them with sugar to taste.
  12. Once cool, you can enjoy these fluffy delights alone or filled with the sweet filling of your choice.

Tips:

  • To fry the berliners correctly, it is best to keep the heat at a moderate level and not high, so that the dough cooks inside.
  • If possible, use olive oil for frying, as it withstands higher temperatures and does not burn. In this way, the frying will be drier and healthier.
  • Also, if you want to fill your berlinesas, make an indentation in the center and fill it with dulce de leche or anything else you want.
