How to prepare delicious garlic and lemon potatoes

In addition to being a good side dish, these garlic and lemon potatoes are perfect for an appetizer, since they are delicious and can be accompanied with a good sauce. Now, I recommend that you follow this recipe exactly to achieve a perfect result.

For these garlic and lemon potatoes, you will need:

Ingredients

  • 3/4 of papines (also known as cambray potatoes)
  • 1 tbsp. of salt
  • Zest and juice of 1 lemon
  • 4 cloves of garlic
  • 2 tbsp. of Manteca
  • Salt, Black Pepper and Paprika to taste
  • 2 tbsp. of previously chopped parsley
  • 1 tbsp. of Oregano
  • Salt and water c/n

Preparation

1- To begin, we wash the papines with the help of a sponge. It is important to wash them well but without damaging the shell, since we are going to cook it.

2- We cut the papines in half and put them in a pot. On top of the baby potatoes, add plenty of water and a handful of salt, bring it to a medium heat and let it cook for about 20 minutes. We need the papines not to cook completely, otherwise they should be a little soft.

3- Once we achieve the desired texture, we remove them from the water and reserve them on a tray.

4- On the other hand, in a pot we put the 2 tbsp. of butter and let it melt well over medium heat.

5- Then we add the papines side down and let them brown.

6- While they are browning, add a pinch of salt, black pepper, paprika and oregano. We mix a little and add the previously chopped garlic, the zest and the juice of 1 lemon, let it cook for a few more minutes.

7- When we turn off the heat, add the parsley and mix well.

And that’s it, now all that’s left is to serve! I recommend enjoying them when they are very hot, since the flavor is more concentrated in this state. If you can’t find papines, you can use the normal size potato, just cut them into medium size to achieve a resemblance to the papines.
