- 1 red pepper or bell pepper
- 1 eggplant
- 1-2 zucchini
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 3 garlic cloves
- 40g breadcrumbs
- 40g grated parmesan cheese
- 400g homemade fried tomato
- Salt
- Ground pepper
- Extra virgin olive oil
- 200g grated mozzarella cheese
Preparation
- Preheat the oven to 180°C.
- Cut the pepper, eggplant and zucchini into thin slices.
- In a large skillet, heat a tablespoon of olive oil over medium-high heat and add the chopped vegetables.
- Cook for 5 minutes or until lightly browned and soft. Then, mix the basil, thyme, minced garlic, salt and pepper to taste and cook for another two minutes.
- Add the fried tomato to the vegetable mixture and cook for 5 more minutes.
- In a small bowl, mix the breadcrumbs with the grated Parmesan cheese.
- In a baking dish, place a layer of vegetables on the bottom and then sprinkle a layer of breadcrumbs with the Parmesan cheese mixture on top; Repeat these layers until all the ingredients are gone.
- Finally, top the top layer with grated mozzarella cheese and bake for 20-25 minutes or until golden and bubbly, before serving hot.
