Crispy vanilla croissants

Perfect crispy vanilla croissants for Christmas gatherings. They were great, at home we ate them straight from the tin. Very popular this holiday season.

Ingredients:

Cake:

  • 250 g – butter
  • 3 pcs – egg yolks
  • 180 g – cream
  • 500 g – flour
  • 1/2 pcs. – lemons – juice + peel
  • 1 pack — vanilla sugar

In addition, we will need:

  • powdered sugar for sprinkling
  • vanilla sugar for sprinkling
  • jam for stuffing

Recipe method:

1. Set the butter aside to come to room temperature. Add egg yolks and cream to it. Mix with a mixer and then add lemon zest and juice, vanilla sugar and flour. Make a smooth dough and set aside for about half an hour. Divide the dough into 10 equal parts.

2. Form a small pancake from each part and roll it up. Place on a baking tray, cover with foil and leave in the refrigerator for 24 hours.

3. Cut out triangles from the prepared pancake-shaped dough (8 pieces) and roll them into the shape of croissants (you can also stuff them with jam or other filling). Place on a baking tray lined with baking paper and bake at 180 degrees for about 20 minutes.

4. While still warm, roll the croissants in a mixture of powdered sugar and vanilla sugar. Enjoy your meal!
