The cake recipe with meringue, dulce de leche and peaches is very easy and practical to make at home.
With a few ingredients and simple steps, you will surprise all your guests with a top-notch dessert.
Here is the list of ingredients and how to prepare it step by step:
Ingredients for the sponge cake
- 210 gr. Of flour
- 210 gr. of sugar
- 6 Eggs
- 1 tbsp. of vanilla extract
Preparation of the sponge cake with meringue and dulce de leche with peach:
- Start by beating the eggs, sugar and vanilla in a bowl. If you use a mixer, give it about 15 minutes until the mixture is well aerated and doubles in size. If you prefer to do it by hand, I also beat for at least 15 minutes until a fluffy consistency is achieved.
- Then, little by little add the flour, integrating it with enveloping movements.
- Turn on the oven at 180º C and butter and flour a mold (you can use parchment paper if that seems more comfortable).
- Cook the cake for 30 minutes, or until it looks golden brown.
- When it’s ready, take it out and let it cool well before unmolding.
For the meringues:
- 100 gr. Claras (leave them out of the refrigerator for a while)
- 200 gr. of sugar
- 1/2 tsp. of baking powder
- 1 1/2 Cornstarch
Preparation:
- In a bowl, mix the sugar, cornstarch and baking powder. Add the egg whites and beat everything until the mixture is thick.
- With this, form meringue discs and small meringues on a baking sheet.
- Turn on the oven at 150º C, put the plate in and after 5 minutes lower the temperature to 100º C.
- Let it cook for an hour.
For the assembly
- 500 gr. of Dulce de leche
- 500 ml. of cream
- 4 tbsp. of sugar
- 1 can of Peaches
- Some edible flowers to decorate (optional)
Armed:
- Cut the cake into three parts.
- Separately, in a bowl with ice, beat the cream with the sugar until it is very firm.
- Start with a layer of sponge cake on a plate.
- Then, a big pile of dulce de leche.
- Put another layer of sponge cake, add whipped cream, chopped meringues and chopped peaches.
- Finish with the last layer of sponge cake, the rest of the cream, more meringues, quartered peaches and, if you want, decorate with edible flowers. And that’s it, enjoy!
