How to make apple, cream and cookie dough pie

This cake combines the freshness of apple with a crispy dough and a soft pastry cream.

Ingredients

For the mass:

  • 200 g of 0000 flour
  • 40g sugar
  • 1 sachet of vanilla sugar
  • 1 tsp baking powder
  • a pinch of salt
  • 90 g of butter
  • 1 egg

For the pastry cream:

  • 500 ml whole milk
  • 2 eggs
  • 60 g corn starch
  • 35 g of butter
  • 70g sugar
  • 1 sachet of vanilla sugar
  • a pinch of salt

For the filling:

  • 4 apples
  • 1 tsp ground cinnamon
  • 70 ml of water
  • 45g sugar

Preparation

  1. Dough: In a bowl, combine the flour, sugar, vanilla sugar, baking powder and salt. Add the butter and combine until you get a sandy texture. Add the egg and combine all the ingredients without kneading, just until integrated. Divide the dough into two equal parts, wrap them in film and put them in the freezer while you prepare the filling and cream.
  2. Pastry cream: Heat the milk in a saucepan. In a separate bowl, mix the eggs, cornstarch, sugars and salt. Pour this mixture into the hot milk, stirring constantly until it thickens. Remove from heat, add butter and combine well. Let it cool.
  3. Filling: Peel and cut the apples into thin slices. In a saucepan, combine the apples, cinnamon, water and sugar. Cook until the apples are tender and caramelized.
  4. Preheat the oven to 180°C.
  5. Remove one of the doughs from the freezer and grate it directly onto a previously greased mold. This will be the base of the cake. Then, distribute the caramelized apples over the grated dough and pour the pastry cream on top.
  6. Grate the second frozen dough over the pastry cream, covering everything.
  7. Place in the oven and cook for approximately 30-35 minutes, or until you see that the top crust is golden.

Tips:

  • You can add raisins or nuts to the filling for additional texture.
  • If you have any uncovered space left when grating the dough, don’t worry, it will expand during cooking and will be perfect.
  • Accompany this cake with a mate or a good coffee to highlight its flavors.
