1 kg tripe
2 tomatoes (chopped)
2 onions (chopped)
4 cloves of garlic (chopped)
2 green peppers (chopped)
2 bay leaves

To start, wash the tripe well under running water and cut it into small pieces.
Place the chopped tripe in a pressure cooker and add enough water to cover it. Cook for 20 minutes after pressing to tenderize the meat, then drain the water and set the cooked tripe aside, while in a large pan heat a drizzle of oil and add the onion and garlic. Fry until golden brown.
Then add the tomato, peppers and bay leaves. Brown for a few more minutes.
Then add the pieces of cooked tripe to the pan and mix well with the seasoning.
Add enough water to cover all the tripe and season with salt and pepper to taste.
Simmer for about 1 hour or until all the tripe pieces are tender and the broth has reduced and thickened.
