Ingredients:
800 g waxy potatoes
1 onion
2 eggs
3 tbsp flour – optionally replace 1 tbsp flour with 1 tbsp oat flakes for more crunch
1 tsp salt
Oil for frying – e.g. rapeseed oil
Preparation:
Peel the potatoes and grate them finely. Then place them in a kitchen towel and squeeze them well. Finely chop the onion.
Mix the potatoes, onion, eggs, flour and salt.
Heat plenty of oil in a pan and fry the potato pancakes in batches over medium heat. This takes about 5 minutes per side.
Then let the fritters drain on a piece of kitchen paper and place them in the oven at 100 degrees top and bottom heat until ready to eat.

This recipe serves as a main course for two people. 400 grams of potatoes per person is absolutely sufficient. If you are only planning to eat the pancakes as a snack or starter, you can adjust the amount of potatoes accordingly. If you have any potato pancakes left over, you can reheat them in the pan the next day.
