Beef barbacoa is a traditional dish of Mexican cuisine, famous for its smoky flavor and tenderness. Prepared with beef slowly cooked in an underground pit or slow cooker, it is usually served with warm tortillas, onion, cilantro, and a variety of sauces to create an irresistible dining experience.
Ingredients:
- 1 kg beef (preferably a cut like brisket or shoulder)
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 can (400 g) crushed tomatoes
- 2 tablespoons apple cider vinegar
- 2 tablespoons Worcestershire sauce
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper to taste

Preparation:
- Cut the beef into large pieces and season with salt and pepper to taste.
- In a large skillet or pot over medium-high heat, heat the olive oil. Add the beef and brown on all sides. Remove the meat and set it aside.
- In the same pan or pot, add the chopped onion and garlic. Cook until golden and fragrant, about 3-4 minutes.
- Add the beef broth, crushed tomatoes, apple cider vinegar, Worcestershire sauce, cumin, oregano, smoked paprika, and return the beef to the skillet or pot. Mix well.
- Reduce heat to medium-low, cover, and simmer for about 2-3 hours, or until meat is tender and falls apart easily with a fork.
- Once the meat is done, remove it from the pan or pot and shred it with a couple of forks. Place the shredded meat back into the sauce and mix well.
- Serve the hot beef barbacoa accompanied by warm tortillas, chopped onion and cilantro, lemon, and any other accompaniment you prefer.
