Light Orange Mousse

Light orange mousse is a healthy and refreshing snack that is perfect for summer days with a soft and airy texture, while having a delicious citrus taste.

Ingredients

  • 2 oranges
  • 20 g cornstarch
  • 2 eggs
  • 1 pinch of salt

Preparation

  1. Squeeze the oranges then keep the zest.
  2. Measure the fruit juice in a glass and mix to obtain 15 cl of liquid.
  3. Heat the 15 cl of liquid then add the zest.
  4. Add the cornstarch then cook over low heat until thickened.
  5. Break the eggs, separate the yolks from the whites. Add the 2 egg yolks to the pan and mix. Beat the egg whites with a pinch of salt and gently incorporate them into the cooled cream.
  6. Pour into ramekins then let cool.
