- Tomatoes
- Sea salt
- Vinegar (white, red or apple)
- sunflower seed oil

Preparation: Dried and pickled tomatoes
- Cut the tomatoes into three parts (or two if they are small). Cover them generously with sea salt and vinegar, and let them dry in the sun, turning occasionally.
- When they are completely dry, rinse them well and let them dry again.
- In a bowl, mix the dressing ingredients: minced garlic, pepper, capers, fresh mint leaves and sunflower seed oil.
- Fill jars with the sun-dried tomatoes and pour the dressing mixture over the top.
- Finish by filling with olive oil. Do not close the jars for 8-10 hours to allow the necessary air to escape. After this period, seal the jars.
