CHICKEN BREASTS STUFFED WITH ASPARAGUS AND MOZZARELLA

Ingredients:  

4 boneless, skinless chicken breasts, Salt and pepper to taste,

1 bunch of fresh asparagus, ends trimmed,

4 slices of Swiss or mozzarella cheese,

2 tablespoons of olive oil,

2 cloves of garlic, chopped,

1 teaspoon dried thyme (optional),

1/2 cup chicken broth,

1/4 cup white wine (optional),

Chopped fresh parsley to decorate.

Preparation:  Preheat the oven to 200°C. Season the chicken breasts with salt and pepper on both sides. Make a cut in the side of each breast to create a pocket without cutting completely. Make sure you don’t cut through the other side. Place 4-5 asparagus inside each chicken pocket and add a slice of cheese. In a large oven-safe skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant. Place the stuffed breasts in the pan and brown on both sides, about 2-3 minutes per side. Add the chicken broth and white wine (if using) to the pan. Sprinkle with dried thyme if desired. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken breasts are cooked through. Remove from the oven and let the breasts rest for a few minutes before slicing. Serve the stuffed chicken breasts on a bed of asparagus and sauce. Sprinkle with fresh chopped parsley.
