INGREDIENTS
- Zucchini 200g
- ground chicken breast 300 grams
- parmesan cheese 50 g (1/2 cup)
- ham 100 grams
- Garlic 1 clove
- Egg 1
- Pepper
- Shall
- Bread crumbs 30 g (1/4 cup)
- Oil for frying
INSTRUCTIONS
- Grate the zucchini and squeeze with your hands to remove excess moisture.
- Add the ground chicken breast, Parmesan cheese, ham, garlic, egg, salt, and pepper to a large bowl.
- Add the breadcrumbs.
- Mix until all ingredients are completely combined.
- Scoop out the mixture and use your hands to create a donut shape. Top the chicken zucchini fritters with more breadcrumbs.
- Pour some extra virgin olive into a non-stick frying pan over medium-low heat. Place the chicken fritters in the pan and cook for about 10 minutes on each side.
- Cook them until golden brown and cooked through.
- To avoid grease, drain the chicken zucchini fritters on a plate lined with a paper towel.
