Ingredients:
For the crust:
200 g (approx. 1.5 cups) chocolate chip cookies, crushed
100 g (approx. 7 tablespoons) unsalted butter, melted
For the filling:
500 g (approx. 2 cups) cream cheese, softened
150 g (approx . 3/4 cup) sugar
1 teaspoon vanilla extract
4 large eggs
200 g (approx. 1 cup) sour cream
100 g (approx. 1/2 cup) chocolate chips or chips
For the topping:
Whipped cream
Chocolate shavings
Instructions:
Preheat your oven to 325°F (160°C).
To make the crust, mix the crushed chocolate chip cookies with the melted butter until well combined. Press the mixture into the bottom of a springform pan to form the crust. Bake in the preheated oven for about 10 minutes, then let cool.
In a large bowl, beat cream cheese, sugar and vanilla extract until smooth.
Add the eggs one at a time, beating well after each addition.
Stir in sour cream until mixture is well blended.
Fold in the chocolate chips or pieces.
Pour the cream cheese mixture over the cooled crust.
Bake in the preheated oven for about 50-60 minutes or until the center is set. It is normal for the center to wobble a bit.
Allow the cheesecake to cool completely, then refrigerate for several hours or overnight.
Before serving, spread whipped cream on top and sprinkle with chocolate shavings.
