Ingredients
- 2 kg chicken thighs
- 1 kg potatoes, cut into large pieces
- 30g fresh rosemary
- Juice of one lemon with freshly grated ginger (20g) to taste
- 50 ml extra virgin olive oil
- Salt to taste
- 20g fresh ginger

- Baking tray
- Foil

- Preheated oven at 180°C and 220°C
Instructions
- Cut large slices of potato. Prepare the marinade with lemon juice and grated ginger.
- Place the thighs on a baking tray previously covered with olive oil. Add the potatoes, salt, rosemary and pour over the marinade. Cover with aluminum foil.
- Bake at 180°C for 45 minutes. Then, remove the aluminum foil and bake at 220°C for 15/20 minutes until the chicken is golden brown and the potatoes are crispy.

- Enough Marinating: Let the chicken and potatoes marinate in the lemon-ginger mixture for intense flavors.
- Even Cooking: Make sure the chicken pieces are evenly distributed for even cooking.
