360 g of pasta
200 g of mozzarella
30 g of Parmesan
30 g of pine nuts
For the zucchini pesto
300 g of zucchini
100 g of Parmesan
40 g of pecorino
30 g of pine nuts
10 leaves of basil
\u00bd clove of garlic
1 pinch of coarse salt
Preparation:
<\/strong>Wash the courgettes and remove the ends, then cut them into cubes.
Put them in the bowl of a blender.
Add the parmesan, pecorino, pine nuts, basil leaves, garlic and coarse salt.
Blend until you get a smooth sauce.
Bring the water to a boil in a large saucepan and add the salt.
When the water boils, throw in the pasta and let it cook.
Drain the pasta and pour it into a salad bowl with the zucchini pesto, the pine nuts and the pieces of mozzarella.
Mix quickly.
Pour the pasta into a baking dish.
Complete the gratin with the grated Parmesan.
Bake at 180\u00b0\/200\u00b0 for 30 minutes: the gratin should be golden and crunchy.
