to make Mexican Enchiladas without dying trying

Enchiladas have so many different ingredients that there are more than 100 varieties . In fact, they are derived from the tortilla, whose origin dates back to the pre-Columbian civilizations of Mesoamerica. As for its exact origin there are many stories, for the same reason that there are many varieties. For example, Potosí enchiladas have as their only inventor Doña Cristina Jalomo (1874-1973). Who accidentally combined the nixtamal dough with the ground chiles, thus creating a tortilla with the heat of the cascabel chile. Keep reading to discover the enchilada recipe and other information that will surely whet your appetite.

Enchilada ingredients

Five corn tortillas.

200 grams of mozzarella cheese.

7 chilies.

2 cloves of garlic.

3 cloves.

A tablespoon of oregano.

A cup of water (200 mL).

Half an onion.

100 ml. of sunflower oil.

Among the many varieties that exist, there is one that is baked. In this way, the cheese on top is gratined or the cheese inside is melted. Also, there are Swiss enchiladas , but they have nothing to do with Europe. In fact, it is said that its origin comes from a renowned restaurant in Mexico City, where a Swiss man who couldn’t stand the sting and ordered them without chili attended. For this reason, they added gratin cheese.

Preparation of the enchiladas

Step 1

Heat a medium saucepan with water. When the water is boiling, add the chilies so that they soften and cook a little. After 10 minutes, strain the chiles from the pot.

Step 2

Put all the chiles in the blender. Add the garlic and the three cloves. Also, fill with half a cup of water and blend for two minutes.

Step 3

If the sauce is very thick, you can add a little more water. Also, add a splash of oil to blend again briefly.

Step 4

Then, after blending, you must strain the mixture. The sauce that remains should be consistent , not liquid. You can save in a container for another occasion.

Step 5

Grate the mozzarella cheese. Cut the onion into small cubes. Later, you can mix both ingredients in a container.

Step 6

Add ground oregano to the dough, so that the flavors mix.

Step 7

Heat a large frying pan and add the 100 ml of oil . Dip the tortillas in chili sauce and fry them briefly. Be very careful with the chili water and oil splashes

Step 8

Carefully remove to place on absorbent paper. Then add the cheese mixed with onion and oregano in the center of the tortilla. Make the classic roll and place on a plate.

Now that we know how enchiladas are prepared, their history and curious facts; It’s time to try them. Invite your friends and family to prepare them , remember that this dish is spicy, will they tolerate it?

Enchiladas have so many different ingredients that there are more than 100 varieties . In fact, they are derived from the
